Chicken with Broccoli and Almonds

A great dish that pairs succulent chicken with crunchy broccoli and almonds. Serve with basmati rice or couscous. For a vegan version, replace the chicken with tofu.

chicken seasoning

lemon juice

almond or peanut butter

Procedure

  1. Add the sauce ingredients to a food processor and mix well. You can also use a stick blender.
  2. Cut the chicken into pieces and separate the broccoli into small florets. Peel the onion, cut it in half and then slice it into half-rings.
  3. Heat the coconut oil in a pan and add the chicken. Sauté for about 8 minutes until well browned. Add the onion, almonds and broccoli and cook for another 3 minutes.
  4. Add the sauce to the pan and mix well. Cook 2 minutes more over low heat. If the sauce is too thick, stir in a few tablespoons of water.
  5. When the sauce is ready, serve immediately with the rice.
