Fried Rice

When you have leftover rice, don’t throw it away, but use it in this delicious Asian-style dish. It is best to use chilled rice. You can also use any other vegetables you have on hand. For a vegan version, leave out the eggs.

light soy sauce

cooked rice

green onions

1 tbsp

sesame oil

Garnishes: green onions, toasted sesame seeds.

Procedure

  1. Pat the tofu dry with a paper towel and cut into small cubes. Finely chop the onion and garlic. Finely dice the carrots and peppers. Cut the green onions into thin rings.
  2. Heat a wok or a larger pan, add the oil and fry the tofu until nicely browned. Remove from the wok and set aside on a paper towel.
  3. Add the oil, onion, garlic, peas, carrots and red pepper to the wok. Sauté at high heat for about 5 minutes.
  4. Push the vegetables to one side of the pan and add the beaten eggs. Stir them gently until they are almost done, then mix them in with the vegetables.
  5. Add the rice, soy sauce, green onions and sesame oil. Stir and fry for about 2 minutes until everything is well combined and heated through.
  6. Serve immediately – top the fried rice with toasted sesame seeds and green onion.
