When you have leftover rice, don’t throw it away, but use it in this delicious Asian-style dish. It is best to use chilled rice. You can also use any other vegetables you have on hand. For a vegan version, leave out the eggs.

Garnishes: green onions, toasted sesame seeds.
Procedure
- Pat the tofu dry with a paper towel and cut into small cubes. Finely chop the onion and garlic. Finely dice the carrots and peppers. Cut the green onions into thin rings.
- Heat a wok or a larger pan, add the oil and fry the tofu until nicely browned. Remove from the wok and set aside on a paper towel.
- Add the oil, onion, garlic, peas, carrots and red pepper to the wok. Sauté at high heat for about 5 minutes.
- Push the vegetables to one side of the pan and add the beaten eggs. Stir them gently until they are almost done, then mix them in with the vegetables.
- Add the rice, soy sauce, green onions and sesame oil. Stir and fry for about 2 minutes until everything is well combined and heated through.
- Serve immediately – top the fried rice with toasted sesame seeds and green onion.
