Procedure
- Soak the cashews in hot water.
- Peel, wash and dice the carrots and potatoes. Peel and dice the onion. Put the vegetables in a small pot, cover with water and cook for about 15 minutes.
- In the meantime, prepare a small casserole dish that can be used in the oven. Cut the washed cauliflower into florets and add them to the dish.
- Drain the cashews. Preheat the oven to 180 °C.
- When the vegetables are cooked, chop them with a blender or stick blender and mix them with yeast flakes, olive oil, sauerkraut water, salt, oregano, cashews, nutmeg and 2 dl of the water in which the vegetables were cooked.
- Pour the well-mixed mixture over the cauliflower and place in the oven for 25 minutes.
- Then add the walnuts evenly and bake for another 5 minutes.
- The cauliflower gratin can be served immediately, or you can store it in the refrigerator. Bon appetit!
