Za spodnje recepte sem izbrala \u0161itake, saj so odli\u010dnega, polnega in bo\u017eajo\u010dega okusa ter prav\u00bb\u017eivljenjski eliksir\u00ab, ki daje vitalnost in energijo. Prav tako veljajo za eno najbolj raziskanih vrst gob. Njihove farmakolo\u0161ko aktivne u\u010dinkovine so ekstrakti LEM, LAP IN KS-2, lentinin in lentinan, iz katerih izdelujejo celo zdravila. Mirne du\u0161e pa lahko v receptih \u0161itake zamenjate s poljubnimi gobami. Morda imate v zamrzovalniku shranjene jesenske jur\u010dke ali pa v va\u0161i trgovini lahko kupite le sve\u017ee \u0161ampinjone ali ostrigarje?<\/p>\n\n\n\n<p><strong>Kosilo: AJDOVE PALA\u010cINKE S \u0160ITAKAMI<\/strong><\/p>\n\n\n\n<p>Za eno osebo<\/p>\n\n\n\n<p><strong>Sestavine:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>60 g ajdove moke<\/li><li>1 jajce<\/li><li>nekaj zelo mrzle mineralne vode z veliko magnezija<\/li><li>1 \u017elica stopljenega masla<\/li><li>100 g \u0161itak<\/li><li>1 sesekljana \u0161alotka<\/li><li>1 droben strok sesekljanega \u010desna<\/li><li>1 \u017eli\u010dka zaseke<\/li><li>1 \u017eli\u010dka olj\u010dnega olja<\/li><li>\u0161\u010dep suhega timijana<\/li><li>1 \u017elica peter\u0161ilja<\/li><li>poper<\/li><\/ul>\n\n\n\n<p><strong>Priprava:<\/strong><\/p>\n\n\n\n<p>Iz moke, jajca, stopljenega masla in mineralne vode naredimo maso za pala\u010dinko in jo pustimo po\u010divati najmanj dve uri. Tik preden za\u010dnemo pe\u010di pala\u010dinko, pripravimo gobe: na zaseki in olj\u010dnem olju posteklenimo \u010debulo, dodamo \u010desen in ko zadi\u0161i, dodamo \u0161e narezane in o\u010di\u0161\u010dene gobe ter timijan. Pra\u017eimo, dokler gobe ne ovenijo in se rahlo pope\u010dejo. Dodamo peter\u0161ilj, solimo in popramo po okusu. Shranimo na toplem. Hitro spe\u010demo pala\u010dinko. Ko je pope\u010dena z ene strani, jo obrnemo in nanjo \u0161e med peko nalo\u017eimo gobe. V posodi segrejemo olj\u010dno olje, dodamo \u0161alotko in koprc ter pra\u017eimo 10 minut oz. dokler se sestavine ne zmeh\u010dajo. Dodamo \u0161e na trakove narezane in o\u010di\u0161\u010dene \u0161itake (ali \u0161ampinjone) ter pra\u017eimo \u0161e 4 minute. Prilijemo vino, sesekljane suhe paradi\u017enike, paradi\u017enikovo mezgo, lovorjev list in po\u010dakamo nekaj minut, da vino izhlapi. Dodamo 2 dl vro\u010de vode, 2 \u017elici oprane kvinoje in vremo 30 minut. \u010ce je jed presuha, dodamo \u0161e malo vode in ponovno zavremo. Potresemo s peter\u0161iljem in ponudimo.
