Procedure
- Cook the rice and lentils separately according to the instructions on the package. Drain and let them cool completely.
- Dice the bell peppers and tomatoes into small cubes. Drain the corn. Wash the spinach if needed.
- Prepare four containers suitable for meal prep. Evenly divide all the salad ingredients into each container. Add one sprig of parsley to each.
- Mix all the ingredients for the dressing in a small bowl. You can add other spices if desired. Divide the dressing into four small, well-sealed containers.
- Store the lentil meal prep in the refrigerator for up to 5 days. Enjoy your meal!
