Meal prep with lentils

Green lentils

basmati rice

Bell pepper

Boiled corn

125 g

Baby spinach

4 sprig

parsley

Dressing

8 tablespoon

Apple cider vinegar

6 tablespoon

Olive oil

6 pinch

salt

Procedure

  1. Cook the rice and lentils separately according to the instructions on the package. Drain and let them cool completely.
  2. Dice the bell peppers and tomatoes into small cubes. Drain the corn. Wash the spinach if needed.
  3. Prepare four containers suitable for meal prep. Evenly divide all the salad ingredients into each container. Add one sprig of parsley to each.
  4. Mix all the ingredients for the dressing in a small bowl. You can add other spices if desired. Divide the dressing into four small, well-sealed containers.
  5. Store the lentil meal prep in the refrigerator for up to 5 days. Enjoy your meal!
