Cabbage salad with peanut dressing

This cabbage salad with a peanut dressing is the perfect combination of freshness and rich flavour. The creamy peanut dressing, crunchy tempeh and lightly spiced extras make a dish that is both wholesome and tasty. It is simple to prepare, and the result is quite delightful. If you want to make it as a standalone dish, simply add some cooked rice noodles and prepare a little extra dressing.

Ingredients

For the salad

100 g

green cabbage

180 g

red cabbage

100 g

carrot

shallot

200 g

tempeh

1 tablespoon

oil

parsley or coriander

chilli

toasted peanuts

For the dressing

80 g

peanut butter

2

limes

3 tablespoons

light soy sauce

3 tablespoons

maple syrup

2 cloves

garlic

1 cm

ginger

Procedure

  1. Finely slice or shred the green and red cabbage. Shred the carrot, and finely slice the shallot. Cut the tempeh into thin slices.
  2. Heat the oil in a pan, and fry the tempeh on both sides over a medium heat until crisp and golden (roughly 3 or 4 minutes on each side). Set aside to cool.
  3. In a small bowl combine the peanut butter, the juice of the limes, the soy sauce, the maple syrup, the chopped garlic, the grated ginger and a little water. Mix well until a thick, creamy sauce is made.
  4. Add the shredded vegetables to a large bowl, and pour in the peanut dressing. Mix well until everything is evenly coated.
  5. Add the fried tempeh, chopped parsley or coriander, and chilli to taste.
  6. Serve the salad fresh, garnished with more coriander or peanuts for extra texture. Enjoy!
