This cabbage salad with a peanut dressing is the perfect combination of freshness and rich flavour. The creamy peanut dressing, crunchy tempeh and lightly spiced extras make a dish that is both wholesome and tasty. It is simple to prepare, and the result is quite delightful. If you want to make it as a standalone dish, simply add some cooked rice noodles and prepare a little extra dressing.

For the salad
100 g
green cabbage
180 g
red cabbage
100 g
carrot
1
shallot
200 g
tempeh
1 tablespoon
oil
parsley or coriander
chilli
toasted peanuts
For the dressing
80 g
peanut butter
2
limes
3 tablespoons
light soy sauce
3 tablespoons
maple syrup
2 cloves
garlic
1 cm
ginger
Procedure
- Finely slice or shred the green and red cabbage. Shred the carrot, and finely slice the shallot. Cut the tempeh into thin slices.
- Heat the oil in a pan, and fry the tempeh on both sides over a medium heat until crisp and golden (roughly 3 or 4 minutes on each side). Set aside to cool.
- In a small bowl combine the peanut butter, the juice of the limes, the soy sauce, the maple syrup, the chopped garlic, the grated ginger and a little water. Mix well until a thick, creamy sauce is made.
- Add the shredded vegetables to a large bowl, and pour in the peanut dressing. Mix well until everything is evenly coated.
- Add the fried tempeh, chopped parsley or coriander, and chilli to taste.
- Serve the salad fresh, garnished with more coriander or peanuts for extra texture. Enjoy!
