When we fancy something sweet, refreshing, and simple-to-prepare, this ice cream made from frozen bananas is the perfect choice. Its natural creaminess pairs beautifully with the freshness of raspberries and the delicate flavour of coconut yogurt, while the chopped almonds add just the right amount of crunch. This simple homemade treat looks and eats like ice cream, yet remains light and full of fruit flavour.

240 g
bananas
100 g
raspberries
60 - 100 g
coconut yoghurt
2 tablespoons
flaked almonds

Procedure
- First freeze the bananas and raspberries (preferably overnight).
- Slice the frozen bananas into rounds and add them together with the coconut yogurt to a good blender or food processor. The amount of coconut yogurt to be added will depend on the desired consistency, how frozen the bananas are, etc. Blitz until smooth and creamy. Scrape the mixture down the sides of the bowl as necessary while blending, and add another tablespoon or two of coconut yogurt if needed to help the ingredients combine.
- Place half of the ice cream mixture in the freezer, then add the raspberries to the remaining half and blitz again until smooth.
- Gently fold the two halves of the ice cream together so the pink colour mixes beautifully with the white, and serve immediately in a bowl or a cone – the choice is yours. Don’t forget to top with flaked almonds. Enjoy!
